As a professional who has worked in the food industry for over 25 years, I have never ever seen so many people with allergies before in my life. Even as a kid I knew maybe one person with a food allergy. But now it feels terribly rampant. Or is it just that food allergies have gotten more attention over the years? Have there always been so many celiacs? Will we eventually see an uptick in corn allergies since so many animals are eating corn diets (presumably gmo corn no less)? Is it as simple as how food is processed nowadays compared to years ago? I recall reading a news article once about how kids who grew up in the countryside had hardly any seasonal allergies compared to kids who grew up in urban areas and became allergic to everything. Something about how the immune response develops with exposure to allergens. Does it work the same way with foods? Thank you!
